The Blueberry-Banana-Coconut Muffins

The first time I cooked with coconut flour, the muffins came out all soggy and wrong (though weirdly delicious anyhow). The second time, there was an avocado incident that we won’t get into here. But the third time, I felt like Goldilocks tucking into her third bowl of porridge: finally, it was juuuust right.

These grain-free blueberry-banana-coconut muffins are soft, moist, and lightly sweet. Since coconut flour is high in protein and fiber and absorbs a lot of liquid and fat, recipes that call for it generally also call for lots of eggs. These have eggs and coconut milk, as well as banana, honey, and LOTS of blueberries. They were inspired by these, but in my version, I halved the eggs, added the coconut milk and banana, and used less oil and sweetener, which I didn’t miss at all. I used frozen blueberries because the fresh ones seemed too perfect to bake with; we ate those on the side.

I recommend playing this gorgeous song while you lean back and savor these (or gobble them up too quickly, like me and my family did). Ahhh, SUMMER.

Ingredients

1 banana

3 tbl olive oil

¼ cup honey

6 eggs

1 cup coconut milk (I used lowfat; regular milk, almond milk or yogurt would all work well too)

2 tsp vanilla

1 cup coconut flour

1 tsp baking soda

½ tsp salt

2 cups blueberries (fresh or frozen)

Directions

1. Preheat the oven to 350°. Spray a muffin tip with olive oil and set aside.

2. In a small bowl, combine a mashed banana, olive oil, honey, eggs, coconut milk and vanilla. Blend well.

3. In a medium-sized bowl, combine the coconut flour, soda, and salt.

4. Fold the wet ingredients into the dry. Mix until combined. Add in the blueberries and mix!

5. Spoon batter into your muffin tin, and bake for ~ 35–40 minutes. I like them warm, with butter and blueberry jam and fresh blueberries on the side. A sprinkle of shredded coconut on top before baking would be SO good, too.
